Hidden Veggie Pasta Sauce

This sauce freezes well so can be defrosted as needed for a quick tasty meal, packed full of 9 hidden veggies! Vegan, dairy and gluten free. You could also use this sauce as a base on pizzas, or add a little more water once cooked and you've got a delicious soup. Or use for chillis and lasagnes - what a versatile sauce!

2 Celery sticks, chopped

1 onion, chopped
1 pepper, chopped
Handful Mushrooms, chopped
2 carrots, grated
1 courgette, grated
Handful spinach
2 salad tomatoes, chopped
Handful Green beans, chopped
3 garlic cloves
1 stock cube
Can of chopped tomatoes
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tbsp salsa
1 tbsp Balsamic vinegar
1 tbsp tomato puree

1. Add all the chopped veg and the garlic cloves to a pan and lightly cook for 5mins, until beginning to soften.
2. Add the chopped tomatoes, stock cube, seasoning, salsa, Balsamic vinegar, puree (and chorizo). Stir and cook for a further 5mins.
3. Add a cup of water and leave to gently simmer for 30-40mins. 
4. Leave to cool a little.
5. Blend until smooth. 
6. Add to pasta.
