Quick Pie Pots

These are great for a lunch or a light dinner!

Quick Pie Pots

1 cup Sweet potato, chopped into tiny pieces.
1/2 cup kidney beans, rinsed & drained 
1 onion chopped small
1 crushed garlic clove
1 tsp curry powder
1 tsp smoked paprika
Sheets of filo pastry, cut into small squares big enough to fill a muffin tin hole.
Small handful of crumbled feta cheese
3 whisked eggs 

  1. Fry the sweet potato, garlic and onion in a pan until softened.

  2. Then add the curry powder and smoked paprika. Stir and cook for a further 2mins.

  3. Place into a bowl and leave to cool.

  4. Whilst cooling take two squares of the cut filo pastry, and place into the muffin tin, leaving the corners sticking out. Repeat for until the whole tray is filled.

  5. Spoon small amounts of the sweet potato mix into the filo pastry cups, add a little of the crumbled feta to each and pour over a little amount of the whisked egg.

  6. Bake in the oven for 10mins on 160.
