Spinach & Avocado Pancakes
A fantastic way to cram in some hidden veg! They're dairy free, freezable, and are ideal for breakfast, lunch, or as a snack!
Large handful of spinach
3/4 cup almond milk
2 tbsp coconut oil
Drop of vanilla
1 cup flour
1 tsp baking powder
1. In a bowl blend together the avocado, spinach, egg, coconut oil, almond milk and vanilla.
2. Shift flour, nut meg and baking powder into a separate bowl.
3. Gradually add flour mix to wet mix. Until all flour combined into a smooth batter.
4. Add tbsp dollops of the mix to a frying pan. Fry on each side until browned and cooked through.
*No need to oil the pan due to the oils in the batter.
