
Sweet Potato Biscuits
These Sweet Potato biscuits are packed with hidden veg and have a soft, scone texture. They’re yummy on their own or warmed with a little butter spread on. They freeze well too!

Half a sweet potato, boiled, mashed & cooled in fridge.
Tsp onion powder
Tsp mixed herbs
1/2 cup of milk
2 cups plain flour
Tsp baking powder
X2 tbsp unsalted butter
Sprinkle of grated cheese

Mix milk with sweet potato, herbs and onion powder.

In another bowl mix together flour, baking powder and butter, to crumble like mix.

Mix sweet potato mixture with flour.

Form a dough, add cheese.

Roll onto floured surface to about 1cm thick. Cut into shape.

Bake at 180c for 10mins. Or until browned on top.
